William Abbott purchased the Cataract Brewery from John Glenwright in 1891 and built a new brewery on the site, which was at the rear of the Phoenix cordial factory. The new brewery, called the Phoenix, was an impressive six storeys high, and was fitted out with the latest equipment, including an aerating plant, the first of its kind in the colony. 

The Phoenix Brewery opened for business on 1 Octo­ber 1891, and quickly gained a high reputation for its ales and stout. At the Tasmanian Exhibition of 1891–92 William Abbott won First Award for his Bottled Ale, Second Award for Light Running Beer on Draught, and First Award for Ale on Draught. He also brewed a non-alcoholic Dandelion Ale that was ‘Good for the liver and kidneys, purifies the blood and assists digestion’.

The Phoenix Brewery was the first brewery in Tasmania to adopt the eight hours’ system of employment, and a Saturday half-holiday. At the turn of the century it was decided to discontinue brewing and to concentrate on the production of soft drinks.
